Meal Plan Monday - Week of March 21

Well, my CSD cleanse is over after today's juice fast, and I'll be posting my complete thoughts on that later this week. Just a sneak preview - I loved it! I'll be sticking with the juicing for breakfast most mornings, trying to include more raw foods in my diet and staying away from sugar. As expected, I don't seem to have a problem with gluten, so I will add back in limited quantities of that. Avoiding it for three weeks gave me lots of great ideas for diversifying my grain intake.

Advance Preparation
Make veggie tray (Jim)
Make salad dressing
Make cashew cheese log
Make peanut butter
Make spelt bread (loaf & baguette)

Monday
Breakfast: Green smoothie, fruit (green juice for me)
Lunch: Raw veggies, soup (green juice for me)
Dinner: Whatever Jim feels like cooking (green juice for me)

Tuesday 
Breakfast: Spelt toast with peanut butter & banana (green juice for me)
Lunch: Out
Dinner: Baked sweet potato wedges, sauteed chard, salad

Wednesday
Breakfast: Oatmeal; fruit (green juice for me)
Lunch: PB&J, raw veggies, fruit
Dinner: Quiche with chard; salad

Thursday
Breakfast: Green smoothie; fruit (green juice for me)
Lunch: Chickpea salad, raw veggies, fruit
Dinner:  Leftovers

Friday 
Breakfast: Spelt toast with peanut butter & banana (green juice for me)
Lunch: Soup, raw veggies, fruit
Dinner: Roasted veggie panini; salad

Saturday 
Breakfast: Oatmeal; fruit (green juice for me)
Lunch: Out
Dinner: Antipasto salad

Sunday
Breakfast: Waffles; fruit
Lunch: Cashew Cheese Log with raw veggies & Nut Thins
Dinner: Creamy Pasta Primavera (recipe coming soon)

  1. Looks like a simple & wonderful week. I LOVE the cashew cheese log & have made all the recipes for nut cheese on the Veg Times website. Yummm!

  2. Yes, I'm going for simple these days. I think there's one from that issue that I still haven't tried. Can't remember which one or why. LOL!
