Eggplant Parmesan recipe a 5 before I even cooked it last week. It's an old favorite from the Fat Free Vegan blog that everyone always loves.
It goes together pretty quickly (especially when I'm lazy and use jarred sauce), and there are always plenty of leftovers for a second dinner or a few lunches. This is how I usually serve it - over whole wheat pasta with a big Caesar Salad. Yum!
Big Sprout - 5 sprouts
Little Sprout - 4 sprouts
Mama Sprout - 4.5 sprouts
Daddy Sprout - 5 sprouts
