Fun Food Friday - Alphabet Soup

Normally, the Sprouts like soup, but it's rarely something they ask for specifically . . . except for this soup. I'm always amazed at how little it takes - in this case some tiny alphabet-shaped pasta - to turn an ordinary meal into something really exciting for them. 

This recipe was adapted from the Eden Foods "Creamy Alphabet Soup" recipe, but I added extra veggies, changed up the seasonings and left out the "cream". In the future, I'd like to try leaving it chunky and adding in some greens.

Alphabet Soup

Ingredients
1 onion
2 tablespoons chopped garlic
1 cup carrots (roughly chopped)
1 cup celery (roughly chopped)
2 15-oz. cans diced tomatoes
1 cup vegetable broth
1 tablespoon dried rosemary
1 teaspoon salt
Pepper to taste
3/4 cup alphabet pasta

Preparation
Saute onion and garlic in a little bit of water until is starts to soften. Add the carrots, celery, tomatoes, broth, rosemary and salt, and simmer over medium heat for 20 minutes (or until vegetables are tender). While the soup is simmering, cook the pasta according to package directions. Puree soup in blender, return to the pot and stir in the pasta.
