What's for Dinner Wednesday - Green Goddess Pasta

Green Goddess Pasta has been one of our favorites since way before I actually bought the Skinny Bitch in the Kitch cookbook since it's one of the recipes they have posted on their website.

This dish is always a huge hit with the Sprouts, and I love watching them shovel in kale, broccoli and zucchini by the forkful. I like it best with quinoa pasta, but whole wheat penne is all I had on hand tonight.

This is also a really simple dish to prepare, and I love that the veggies cook right in with the pasta - so easy! I do make a few small deviations from the recipes, such as sauteing the garlic in water instead of coconut oil and reducing the Earth Balance from six tablespoons to four.

After taking this picture, I decided that I definitely overdid it on the portion size and gave this dish to Jim. He proceeded to eat it and go back for seconds on the pasta!

  1. This looks so delicious! I will have to try it with my kids--they actually like all of these green veggies. I have to ask though--do your kids really eat salad? I can get mine to eat some if I don't put dressing on it, but they aren't terribly happy about it.

  2. It's one of our favorites - the Sprouts because it's tasty and me because it's easy! I love that it all cooks (for the most part) in one pot.

    Big Sprout is actually a very enthusiastic salad eater. Little Sprout eats them, but probably only because I make her eat salad before she can have anything else. :)
