Monday: Eggplant Parmesan; salad
Tuesday: Leftovers
Wednesday: Extraordinary Tofu Salad pitas with raw veggies & fruit (at Disney)
Thursday: Whatever Jim makes (I'm going out for sushi with the girls)
Friday: Simple soft tacos; salad
Saturday: Braised Cabbage with Seitan; salad
Sunday: Zucchini-Goat Cheese Pizza (made with Cashew Cheese and homemade crust); salad
